Silken Tofu Pancakes with Strawberries & Maple
- 75 g x Silken Tofu
- 1.5 tbsp x Apple Sauce
- 0.25 cup x Plain White Flour
- 0.5 tsp x Baking Powder
- 0.5 tsp x Olive Oil
- 0.25 cup x Fresh Strawberries
- 0.5 tbsp x Pure Maple Syrup
Use a stick blender or food processor to combine tofu & apple sauce until smooth.
Sift flour into bowl.
Add baking powder & a pinch of salt. Stir blended tofu & apple sauce mixture into flour.
Add oil to hot pan & reduce to medium heat.
Spoon mixture into pan & cook until bubbles appear on top, & the bottom is golden. Flip.
Top with cut strawberries.
Drizzle over maple syrup.
